The coconut tree is tapped to produce a highly nutrient-rich sap that is given off from the coconut blossoms – this is the lifeblood of the coconut tree. The sap contains phosphorus, potassium, iron, magnesium, sulfur, boron, zinc, manganese and copper. It is especially rich in potassium, containing an impressive 192 milligrams per tablespoon. This Nutrient-rich sap has a low glycemic index (GI 35) and is a plentiful source of 17 amino acids, minerals, vitamin C, broad-spectrum B vitamins and practically has a nearly neutral pH. Vinegar made from this natural sap ia unheated and naturally aged for almost a year hence it is enzymatically active and nutritionally exceeds other vinegars in its amino acid, vitamin and mineral contents as well as an excellent source of FOS (a prebiotic that promotes digestive health).

One of the most unique characteristics of coconut vinegar is that it forms its own mother culture as it naturally ages. These cobweb strands are composed of raw enzymes and protein molecules and living gut-health promoting bacteria. In contrast to apple cider vinegar which often requires some of the mother culture from previous batches in order to achieve the natural fermentation process. Coconut water vinegar undergoes a similar “assisted” process and is unable to form a mother culture resulting in a less nutritious end product. Coconut sap vinegar however is aged without a single alteration , thereby retaining and even enhancing its nutrient rich properties
